Los Nogales Farm is a family bussines, so it is difficult to talk about just one name. But the leader of the projects on the farm is Oscar Hernandez. Oscar is a third generation farmer who grows coffee in the south of the department of Huila. Los Nogales is a center of innovation and information for all the proactive farmers in the area.
This coffee is quite funky and sweet. Expect sweet candy like coffee with a lot of acidity because of fermentation. If you like funky but acidic coffee, you will fall in love with this coffee.

 

About the process:
1. Hand picking of cherries
2. Oxidation - the cherries are piled into large mass and allowed to oxidize, the temperature in the flesh rises to 50 degrees
3. Washing and removal of floaters
4. Peeling the cherries
5. Squeezing the juice out of the skins and mixing this liquid with the peeled grains in fermentation plastic barrels. Addition of the required acetic bacteria.
6. Fermentation for 144 hours
7. Washing and drying for 20 days
