Luisa Fernanda Nieto Zarate is owner of a small farm (3ha) in Bruselas, focusing on small production high quality coffee. Luisa became a member of Asogloriellas few years ago, an association of women coffee growers, where she gained a lot of knowledge about processing and coffee practices. Gloriellas is a association of female farmers, currently 42 members. It was founded 2 years ago and the goal of the group is to promote community development through quality, innovation and collaboration. 
The process of this aji lot begins with a 24hour fermentation, during which coffee ferments in the cherry. Then, cherries are depulped (cherry is removed) and placed in plastic containers equipped with airlock valves that allow gases produced during fermentation to escape. Once fermentation is complete, beans undergo a semi-washed process, during which the remaining pulp is removed. Finally the beans are sun-dried for 20 days.
