Another gem from a well known producer from Colombia Oscar Hernandez. I think i had already 4 coffees from him and every single one was super super popular. Oscars coffees are unique, most of them extremely sweet. This orange bourbon undergo quite a long process and as Robb from AMOC coffee once described Oscars coffee, this is some sort of honey process because it is for sure not a classic honey.
It is a very very sweet coffee, with a candy sweet finish with a lot of tropical notes which also includes very interesting acidity. A lovely coffee, but quite funky and fermenty. If you liked past coffees from Oscar Hernandez you will for sure love this one!!
Detailed process:
1. good picking of ripe fruits, only riped fruits are picked
2. selection by density with water - this helps separate quality beans from defective ones
3. thermal shock - selected beans are subjected to 80 degree celsius water for one minute, followed by rapid cooling with cold water for 3 minutes - this process breaks down the sugars
4. pulping - beans are pulped and sugars obtained by pressing the shells of the same beans are added - this gives coffee certain sweet notes
5. fermantation - coffee beans undergo a fermentation process that lasts 120h
6. sun drying - finally, fermented coffee beans are dried in the sun for 15 days
To discover unique coffee flavour profiles we recommend to use very soft mineral water with a low HCO3 aiming for total hardness of less than 100 mg/l.
